A very rare wine made only in exceptional vintages.
The stunning last picking of the Petit Manseng in late December produces Frimaire which is only made during exceptional vintages. A delicious wine with candied fruit aromas. Complex, very rich and good acidity, while maintaining balance and freshness. Pacherenc du Vic Bilh wines are sophisticated and impressive and this is one of the very best. It has great ageing potential so enjoy now and until 2015.

Enjoy with Foies Gras, pate, terrine, parfait, blue and sheep milk cheeses, fresh fruit and desserts. To enjoy this wine at its best remove it from the fridge 30 minutes before drinking.

Pacherenc du Vic-Bilh is distinctly different to Sauterne in that the grapes are not affected by botrytis because the climate is not sufficiently humid. The richness and balance are a result of the grapes being harvested very late having been left to shrivel and concentrate the flavours.

Terroir: Chalky-clay soil of the best terroirs

Grape Varieties: 100% Petit Manseng from 10 to 20 year old vines.

Cultivation: Yield of 8 to 10 hl/ha from planting of 4,500 plants per hectare. Sustained farming, buds and bunch selection, thinning of leaves and bunches. To maintain quality, hand harvested in small containers holding only one layer of bunches.

Vinification: Whole berry pressing with juice selection after pressing. Fermentation in new barrels is stopped by lowering the temperature of the voat.

Ageing: On the lees, 8 to 12 months in new French oak barrels.
