A wonderful nose of exotic rich fruits. There is a marriage of very ripe fruit (peach, apricot), quince, dried fruit, honey and vanilla. The mouth is perfectly round, large, plump and smooth to perfection, very aromatic and unusually long. This wine is so enjoyable and will keep for several years.
The late October picking of the Petit Manseng produces Vendemiaire. The grapes have withered to a rich concentration and the resulting wine is truly superb having the typical candied fruit aromas. An aromatic richness and pronounced acidity maintains a beautiful balance and freshness not overpowered by excessive sweetness. Pacherenc du Vic Bilh are sophisticated and impressive. Enjoy now and for several years.
Enjoy as an aperitif, with Foies Gras, pate, terrine, blue and sheep milk cheeses, fruit and desserts. To enjoy this wine at its best remove it from the fridge 30 minutes before drinking.
Pacherenc du Vic-Bilh is distinctly different to Sauterne in that the grapes are not affected by botrytis because the climate is not sufficiently humid. The richness and balance are a result of the grapes being harvested very late having been left to shrivel and concentrate the flavours.

Terroir: Limestone and clay soil of the best terroirs
Grape Varieties: 100% Petit Manseng from 50 year old vines.
Cultivation: Yield of 10 to 15 hl/ha from planting of 4,500 plants per hectare. Sustained farming, buds and bunch selection, thinning of leaves and bunches. To maintain quality, hand harvested in small containers.
Vinification: Pressed in whole clusters. Selection of juice press. Fermentation in new oak at 18 °. Mutage cold depending on the desired balance.
Ageing: On the lees, 12 months in new French oak barrels.
Vendémiaire was the first month in the French Republican Calendar created by Napoleon. The month was named after the French word vendange, meaning grape harvest. Vendémiaire was the first month of the autumn quarter (mois d'automne). It started late September and ended late October. Vendémiaire precedes the Brumaire and Frimaire. In political & historical usage, 13 Vendémiaire of the year iv (Oct. 5, 1795) was the day when Napoleon Bonaparte, until then an obscure general, won fame by putting down a serious insurrection. The Parisian electorate had revolted against certain decrees designed to perpetuate the power of the leaders of the Convention in the Directory, which was about to be established. Napoleon crushed the rebels with artillery fire—which he later described as "a whiff of grapeshot."
