Cultivation: Maydie is a wine liqueur made of hand harvested, over ripened, Tannat grapes. The total natural sugar content is 250-300 g.
Vinification: A100% Tannat liqueur wine with a vinification very similar to that of a Port. The grapes are cold soaked in vertical wooden vats for several days. The unfermented grapes are then fortified with wine distillate at 96.4°. The cap is punched down regularly for a few days. In total, the maceration of the grapes lasts for about a month.
The finished liqueur is bottled without filtration. No oenological or aromatising ingredient is ever added.
